White Bean Chicken Chili

Pair with 21 Brix Winery Noiret

Ingredients:

– 2 tablespoons vegetable oil

– 1 small onion, chopped

– 2 cloves garlic, minced

– 1 (14.5 ounce) can chicken broth

– 2 cans (14.5 ounce each) diced tomatoes

– 1 (7 ounce) can diced green chilies

– 1 teaspoon dried oregano

– 1/2 teaspoon ground cumin

– 1 (15.25 ounce) can of corn

– 1 pound diced and cooked chicken breast

– 1 (15.5 ounce) can Great Northern beans

– Salt and pepper to taste

– Cheese, sour cream, tortilla chips and cilantro for garnish

Directions:

Heat oil and cook onion and garlic until soft. Stir in broth, diced tomatoes, chilies and spices. Bring to a boil, then simmer for 10 minutes.

Add corn, chicken and beans; simmer for 5 minutes. Season with salt and pepper to taste.

Garnish with cheese, sour cream, tortilla chips and cilantro.
