Cherry Chocolate Cookies

Pair with 21 Brix Winery Ella’s Red

Ingredients:

– 1/2 cup margarine, softened

– 3/4 cup brown sugar

– 1 teaspoon vanilla

– 1 tablespoon cherry juice

– 1 1/2 cups flour

– 20 – 25 maraschino cherries, patted dry

– 20 – 25 chocolate chips + 1 cup chocolate chips


Directions:

Cream softened butter in a bowl. Add brown sugar and mix well. Add vanilla, cherry juice and flour to the mixing bowl. After mixing together all ingredients, place dough in refrigerator overnight to chill.

Once chilled, stuff each cherry with 1 chocolate chip, then wrap the cherry in 1 tablespoon of dough.

Bake cookies on ungreased cookie sheets at 350 degrees for 12 – 15 minutes. Let cookies cool completely on cooking rack. Melt 1 cup of chocolate chips and dip tops of cookies in melted chocolate. Let chocolate hardened completely before packing cookies.

Yield: 20 – 25 cookies
