Pair with fish tacos, lobster, honey baked ham or pork tenderloin, spicy Thai noodles, curried vegetables, sweet and tangy Chinese, fiery Mexican or Tex-Mex recipes that include cilantro, or any salty food, especially appetizers.

Pairs well with savory, washed rind cheeses such as Manchester, and semi-soft cheeses including Fontina and Havarti. Goat’s milk cheeses can pair well, including Ibores from Spain. Gouda, white cheddar and Swiss cheese are also good choices.

Wine-making Notes

Grapes were crushed, pressed, cold settled, then transferred to a stainless steel tank. Fermented with select yeasts specific to Riesling, bentonite fined and bottled.
